Ingredients

1 1/2 c sugar
2 c all-purpose flour
1 tsp baking soda
1 tsp salt
2 eggs
2 c crushed pineapple (one 15 oz can, do not drain)
1/3 c brown sugar, firmly packed
1/2 c walnuts (chopped or cut up halves)
1 c canned milk (evaporated)
1 stick margarine
1 tsp vanilla

Nancy's Notes:

My Mom's been gone for some time now and this is one of the recipes she gave me after I tried it and loved it. Funny how little things like recipes bring back memories and times spent together...enjoy!

 

Directions

Mix together first 4 ingredients (sugar, flour, soda & salt.)

Then add in eggs and crushed pineapple. Mix with spoon until all moistened.

Pour into a 9x13" greased pan.

Sprinkle 1/3 cup brown sugar and the walnuts over the cake mixture.

Bake at 350 degrees for 40-45 minutes. ( no need to cover)

Boil 1 cup canned milk with 1 stick of margarine and 1 teaspoon vanilla. (just to boil and take off heat)

Pour the milk mixture over the warm cake.

Cut into squares and serve with ice cream and/or whipped cream. Keep pan covered so it doesn't dry out.

surely that really isn't a cup of salt...is it a teaspoon?? or half tsp?

Thanks Debbie, no, it's a teaspoon. I went in and edited it correctly. Just when you think it's all good to go, I must be tired but do appreciate you catching it so early.

Nancy, this is one of my favorite cakes, it is delicious and moist as can be. Thanks for sharing, just made me decide to make it again! :-)

Hi, going to make today but is one stick of marg 1/2 cup cause now you get 4 half cup sticks in a package.

Donna one stick of margarine is 1/2 cup. With the box of 4 half sticks you would use two of them.
