My Mom's been gone for some time now and this is one of the recipes she gave me after I tried it and loved it. Funny how little things like recipes bring back memories and times spent together...enjoy!
1 1/2 c
crushed pineapple (one 15 oz can, do not drain)
brown sugar, firmly packed
walnuts (chopped or cut up halves)
canned milk (evaporated)
1Mix together first 4 ingredients (sugar, flour, soda & salt.)
2Then add in eggs and crushed pineapple. Mix with spoon until all moistened.
3Pour into a 9x13" greased pan.
4Sprinkle 1/3 cup brown sugar and the walnuts over the cake mixture.
5Bake at 350 degrees for 40-45 minutes. ( no need to cover)
6Boil 1 cup canned milk with 1 stick of margarine and 1 teaspoon vanilla. (just to boil and take off heat)
7Pour the milk mixture over the warm cake.
8Cut into squares and serve with ice cream and/or whipped cream. Keep pan covered so it doesn't dry out.
