THIS IS A VERY DELICIOUS CAKE. EVERYTIME I MAKE IT PEOPLE REALLY GOBBLE IT DOWN AND COMMENT ON HOW DELICIOUS IT IS. IN FACT THEY ALWAYS WANT ME TO MAKE ONE FOR CHRISTMAS.

Ingredients

1 1/2 c
salad oil
1 c
sugar

eggs one at a time {mix well} gradually add
2 c
sifted flour
1 tsp
baking soda
3 Tbsp
cinnamon
3 Tbsp
vanilla extract

finely grated carrots
1 tsp
salt

MIX WELL BAKE AT 350 DEGREES TILL DONE ABOUT 1 - 1 1/2 HRS IN A TUBE PAN

NUT ICING

stick butter melted

3 oz. philly cream cheese

BEAT TILL CREAMY THEN GRADUALLY ADD

box confectioners powered sugar
1 Tbsp
vanilla extract
1 c
chopped pecans

WHENEVER I MAKE THIS CAKE THE ICING RECIPE IS REALLY TOO MUCH FOR ONE CAKE SO I USUALLY DOUBLE IT AND IT IS ENOUGH ICING FOR 3 CAKES
