|2 c||all purpose flour|
|2 tsp||ground cinnamon|
|2 tsp||baking powder|
|2 tsp||baking soda|
|1 1/2 c||canola oil|
|1 tsp||pure vanilla extract|
|1 c||nuts, chopped (walnuts are good-so are pecans)|
|4 c||tart chopped apples - you don't need to bother to peel them|
Preheat the oven to 350?F, grease a 9" x 13" baking dish.
Sift or whisk together all the dry ingredients in a large mixing bowl.
Beat together all the liquid ingredients. Beat into the dry ingredients and mix well until smooth.
Stir in the apples and nuts.
Bake 45 min - 1 hour at 350 degrees F until the cake passes the toothpaste test.
