My German friend Hilda mother's recipe. a very old one. I have enjoyed this at her home, many times. It is a keeper. Don't shy away,I am sure you will enjoy it ,and want a second helping!

    tart apples ( med size)
  • 2
    lemons juiced
  • 3 Tbsp
    sugar
  • 3 Tbsp
    butter
  • 3/4 c
    sugar
  • 2
    separate egg yolks.. ( keep separate)
  • 1/2
    lemon, juiced and the peel grated
  • 1 tsp
    baking powder
  • 1-1/2 c
    flour
  • 3/4 c
    milk
  • 1 Tbsp
    rum or rum extract
  • 2
    egg whites
  • 1 tsp
    butter- to grease pan
  • 1 tsp
    vegetable oil
  • 3 Tbsp
    powdered sugar

    Peel apples, core and cut in half. Cut decorative slits length wise in apples, about 1/2 inch deep. Sprinkle with lemon juice and sugar. Set aside. Cream butter and sugar together. Then with egg yolks, beat in one at a time. Gradually beat in lemon juice and and grated peel. Sift flour and baking powder together. Gradually add to batter. Blend in milk and Rum. In a small bowl beat egg whites until stiff..Fold into the batter. Generously grease a springform pan.Pour batter in and top with apple halves, cut side up..Brush apples with oil. Bake in a preheated 350 oven for 35to 40 minutes.. Remove from pan. Cool. Sprinkle with powdered sugar.
