CAKE:
2/3 c shortening
2 1/2 c cake flour, sifted
1 2/3 c sugar
1 1/4 tsp baking powder
1 tsp baking soda
1 tsp salt
1 1/4 c bananas, mashed
2/3 c buttermilk
2 large eggs
2/3 c pecans, chopped
BUTTERCREAM FROSTING
1/3 c butter, softened
1 pkg (8 oz) cream cheese, softened
1 box powdered sugar (16 oz)
1 large egg yolk
1 1/2 tsp vanilla
2 Tbsp milk

A dear friend of our family, and my niece's mother-in-law, gave us this recipe. It's delicious.

 

Directions

For the cake: Do NOT use a mixer ... Stir shortening to soften; sift in dry ingredients. Add bananas and 1/2 of the buttermilk. Mix until flour is dampened.

Beat vigorously by hand for 2 minutes. Add remaining buttermilk and eggs; beat 2 minutes longer by hand. Fold in nuts.

Pour into 2 greased and floured round cake pans. Bake at 350 degrees for app. 35 minutes.

Remove from oven and cool on wire rack before inverting onto cake plan and frosting.

For the frosting: Mixer allowed. Cream butter and cream cheese gradually with about 1/2 box of sugar; blend well.

Beat in egg yolk and vanilla; gradually blend in remaining sugar. Add enough milk to make frosting a good spreading consistency. Ice layers.

Hi Debbie,
Thank you for sharing, it sounds and looks great. I want to try it however, I don't want to use raw egg yolk for the icing. Can that be replaced with anything else?

Gia, you can try leaving the yolk out entirely or adding some cream in place of the egg to make up for the lost moisture.
