| 1 1/4 c | bananas, mashed |
| 2/3 c | buttermilk |
| 2 large | eggs |
| 2/3 c | pecans, chopped |
| BUTTERCREAM FROSTING | |
| 1/3 c | butter, softened |
| 1 pkg | (8 oz) cream cheese, softened |
| 1 box | powdered sugar (16 oz) |
| 1 large | egg yolk |
| 1 1/2 tsp | vanilla |
| 2 Tbsp | milk |

Directions
For the cake: Do NOT use a mixer ... Stir shortening to soften; sift in dry ingredients. Add bananas and 1/2 of the buttermilk. Mix until flour is dampened.Beat vigorously by hand for 2 minutes. Add remaining buttermilk and eggs; beat 2 minutes longer by hand. Fold in nuts.Pour into 2 greased and floured round cake pans. Bake at 350 degrees for app. 35 minutes.Remove from oven and cool on wire rack before inverting onto cake plan and frosting.For the frosting: Mixer allowed. Cream butter and cream cheese gradually with about 1/2 box of sugar; blend well.Beat in egg yolk and vanilla; gradually blend in remaining sugar. Add enough milk to make frosting a good spreading consistency. Ice layers.
