  • 1 1/4 c
    all-purpose flour
  • 1/2 c
    cocoa powder
  • 1 tsp
    baking soda
  • 1 tsp
    salt
  • 3/4 c
    unsalted butter, melted
  • 1 c
    brown sugar, lightly packed
  • 1
    egg
  • 1/2 Tbsp
    vanilla extract
  • 1 c
    semisweet chocolate chips
  • 1 c
    m&ms
  • FOR THE FUNFETTI TRUFFLE LAYER
  • 1/2 c
    unsalted butter, room temperature
  • 1/2 c
    white sugar
  • 1 c
    flour
  • 1 c
    dry funfetti cake mix (or white cake mix & 2 tbsp sprinkles)
  • 1 tsp
    vanilla extract
  • 1/8 tsp
    salt
  • 3-4 Tbsp
    milk
  • FOR THE FROSTING
  • 1/4 c
    unsalted butter, room temperature
  • 4 oz
    reduced fat cream cheese, room temperature
  • 1/2 tsp
    vanilla extract
  • 1 1/2 c
    powdered sugar
  • 1/4 c
    dry funfetti cake mix (or white cake mix & 2 tbsp sprinkles)
  • sprinkles, for decoration

How To Make funfetti stuffed chocolate m&m cookie cake

    For the cookie cake: In a medium bowl, whisk together the flour, cocoa, baking soda and salt. Set aside. In a large bowl, beat melted butter and sugar together until creamy, about 3-4 minutes. Mix in egg and vanilla extract. Add flour mixture until combined. Stir in chocolate chips and M&MS. Dough will be thick and sticky. Cover and chill for at least 3 hours or overnight.

    For the truffle layer: In a medium bowl, beat the butter and sugar until light and fluffy. Add cake mix, flour, salt, and vanilla and mix thoroughly. Add 3 tablespoons of milk or more if needed to make a dough consistency. Roll dough into a 10-inch round disk. Wrap in plastic wrap and chill for at least 3 hours or overnight. When ready to bake, preheat oven to 350 degrees. Place parchment paper in the bottom of an 10-inch springform pan. Grease the sides. Spread half of the cookie dough out into the pan. Place truffle layer on top and cover evenly with remaining cookie dough. Bake for 18-20 minutes. Remove from oven and let cool for about 15 minutes, then transfer to cooling rack to cool completely.

    For the frosting: In a medium bowl, beat butter, cream cheese and vanilla on medium speed until smooth. Add powdered sugar and cake mix and beat on low until just combined. Increase speed to medium-high and beat for 2 minutes. If frosting is too thick, mix in a bit of heavy cream or milk until desired consistency is reached. Once cookie cake is cool, frost and top with sprinkles and more M&Ms if desired.
