Ingredients

3/4 c
butter
1/2 c
granulated sugar
1/2 c
packed brown sugar
2 large
eggs
1 tsp
grated orange peel
1 tsp
pure vanilla extract
1 3/4 c
all purpose flour
1 tsp
baking powder
1/4 tsp
salt
2 c
grated zucchini
1 c
golden raisins
1/2 c
flaked coconut

FROSTING

3 c
powdered sugar
1/2 c
butter
1 pkg
(3 oz) cream cheese, softened
1 tsp
grated orange peel
1 Tbsp
fresh orange juice
1/2 tsp
pure vanilla extract
1/2 c
+/- chopped walnuts (optional)

Directions Step-By-Step

Heat oven to 350 degrees.
Lightly grease and 13 x 9 inch baking pan
Set aside.
Grate your zucchini and orange peel
and juice your orange.
set them all aside.

In large mixing bowl combine 3/4 c butter, granulated sugar, brown sugar, eggs, 1 tsp peel and 1 tsp vanilla.
Beat at medium speed until light and fluffy.

Add flour, baking powder and salt.
Beat on low speed until well blended.
Stir in zucchini, raisins and coconut.

Spread mixture evenly in prepared pan.
Bake for 20 to 25 minutes or until slight impression remains when bars are lightly touched in center.
Cool completely.

In medium mixing bowl, combine powdered sugar, butter, cream cheese, orange peel, orange juice and vanilla.
Beat on low speed until smooth.
Spread frosting evenly over bars
OPTIONAL: Top with chopped walnuts (or nut of choice)
