YOU say TOMATO,
I say TOMATOE !....LOL
It doesn't matter...this is one delicious cake....and why not, we all have heard of the famous Campbell Soup Tomato Cake!! baked and liked it.
BuT the soup is loaded with salt...etc.
You might like to try this healthy alternative.
No loss of flavor...A far superior cake, fresh tomatoes, nutmeg and cinnamon..whats not to like!!

Ingredients

1/3 c
vegetable oil ..add 1 egg
1/2 c
fresh seeded tomatoes, coarsly chopped...or pureed
1/2 tsp
vanilla extract
1-1/2 c
whole wheat flour, sifted
1/2 tsp
baking soda
1 pinch
salt, ...sea salt if you have it
1/8 tsp
nutmeg
1/4 tsp
cinnamon
1/2 c
chopped nuts...this is optional
2-3
fresh tomatoes, seeded & chopped
whipped cream

Directions Step-By-Step

Pre-heat oven to 325 F.
Butter and flour a 9 inch cake pan.
Set aside. In a bowl whisk together oil and egg. Add tomatoes and vanilla.
Set aside.
In a second bowl, mix remaining ingredients, exceptwhipped cream.

In a second bowl, mix remaining ingredients,
except the whipped cream!
Fold into first mixture.
Pour into baking pan. Bake in oven 50 minutes.
Garnish and serve wth whipped cream... Enjoy the cake.....
