Fresh Apple Cake

A Secret Ingredient recipe. This cake is loaded with fresh apples. You can use pears, instead, if you wish.

3 cups flour
1 tsp. each baking soda, baking powder and salt
1 tsp. cinnamon
3/4 tsp. each nutmeg and mace
2 cups sugar
1 cup vegetable oil
3 eggs, beaten
2 tsp. vanilla extract
3 cups chopped apples or pears
1 cup chopped pecans

Directions Step-By-Step

Mix flour, baking soda, baking powder, salt, cinnamon, nutmeg and mace in bowl. Beat sugar and oil together in another bowl. Add eggs, one at a time, mixing well after each. Stir in vanilla. Add flour mixture and mix well. Stir in apples and pecans; batter will be stiff. Pour into greased and floured Bundt pan. Bake in preheated 350 oven for 1 hour or til a wooden pick inserted in center comes out clean. Cool in pan for 5 minutes. Invert onto serving plate. Makes 12 servings.
