Combine icing sugar, honey and milk in a small bowl. Set aside.
Preheat oven to 325 F. Lightly grease or spray a Bundt pan or tube pan.
In a large bowl combine apples, vanilla, pecans and cinnamon. In a separate bowl sift flour, baking soda and salt. Add to apple mixture and stir to combine.
in a separate bowl, beat together eggs, sugar and oil. Add to the apple/flour mixture and stir with a wooden spoon to combine. The mixture will be very thick and your arm/wrist will get a good workout.
Scrape the batter into the prepared pan and bake for 1 hour and 30 minutes or until a tester inserted in the middle comes out clean.
Allow the cake to cool fully in the pan and then turn out onto a plate. Drizzle the honey glaze over the cake.
