Beat the oil and sugar together until well blended. Add eggs one at a time, beating well after each. Sift together flour, salt and soda, add gradually to egg mixture, blending thoroughly. Stir in apples, pecans and vanilla. Pour in greased and floured 10-inch tube pan. Bake in 350 degree oven for 60-70 minutes.
Directions for Frosting: In a saucepan over medium heat, melt butter with brown sugar; add milk and bring to a rolling boil. Boil for 2 or 3 minutes, cool and add vanilla. If frosting is not thick, beat a few strokes. Frost top and sides of cake.
