I grew up with this cake in Washington state where apples are plentiful. It was always a favorite! I have made it throughout the years with some changes & always get special requests to bring this to parties & events. It was requested that I bring it to Thanksgiving dinner in a few weeks!
Cut apples into 1/2-1" cubes, pour eggs over & mix in sugar & oil. Sift remaining dry ingredients together first, mix with apple mixture then add vanilla & nuts (if you like). spray bundt cake pan with Pam, add batter (will be a little dry). Bake 375 degrees for 45 minutes or until knife comes out clean. Let cool & invert into plate.
Put butter, brown sugar & milk into small saucepan & gently boil about a minute while stirring. Pour glaze over cake & enjoy!
