This recipe is my absolute favorite cherished "Budnick Family" Recipe! This recipe has been handed down through generations of Budnick's, and we've all heard that this is the best zucchini bread that anyone has ever tasted. Please cherish this recipe if you desire to pass it on. My Grandma shared this recipe with me when I moved out on my own after highschool, and now I have done the same with my own children. Ingredients For fantastic zucchini bread

  • MAKES TWO BREAD LOAVES
  • YOU WILL NEED:

    eggs
  • 2 c
    sugar
  • 1 c
    oil
  • 2 tsp
    vanilla extract
  • 2-1/4 c
    all purpose flour
  • 2 tsp
    baking powder
  • 2 tsp
    baking soda
  • 1 tsp
    salt
  • 3 tsp
    cinnamon
  • 2 c
    grated zucchini (or 1-1/2 c. grated zucchini + 1/2 c. applesauce)

How To Make fantastic zucchini bread

    *Preheat the oven to 350 degrees Farenheit *Using a large mixing bowl and mixer, combine eggs, sugar, and vanilla, and mix well. You then add the oil and mix until well blended.

    *In a separate bowl (or carefully added onto batter using layer of flour first), combine flour, baking powder, baking soda, salt, and cinnamon. *Gradually add this dry mixture into your batter using a mixer or large wooden spoon. *Mix until well blended.

    *Add the grated zucchini to the batter, and stir in well with a large wooden spoon. *(At this stage, you may add any extras such as nuts, apple slices, chocolate chips, raisins, etc...) *Pour the batter into two bread loaf pans(5.25x9x2.75in.)or equivalent. *Bake in center of oven at 350 degrees F. for 45-60 mins. *Do not over bake and do not underbake. A good way to check them for being done is using toothpicks approx. 1-1/2" from edge of pan. Toothpicks in center will be clean but look moistened. (You don't want it overdone) *Cool Bread in the pans for approximately 15 mins, then take a rubber spatula and slide it down the sides and ends, to gently loosen. *For wonderfully moist bread with flavorful top, carefully loosen the bread from sides and bottom, and tip upside down onto large piece of aluminum foil. Flip the bread right-side up carefully, using the piece of foil, and wrap up into the foil. Keep on counter until ready to eat! *You can also be creative and use a glaze over the zucchini bread, use in muffin pans, make cookies, or bake in a thin layer on a cookie sheet, and make a jellyroll type dessert using applepie filling, vanilla glaze, or glaze with raisins and roll up like a jellyroll. *Enjoy! (You may need to double the recipe so you can share with others)
