Family Favorite Pumpkin Bars

I oould eat one of these daily, but it wouldn't compliment my girlish figure ;) This was my first "big hit" as a domestic chef. Everytime fall comes around, they ask, "Where's the pumpkin bars?" and your family will, too.

Ingredients

2 c
white sugar
1 c
vegetable oil
4
eggs
16 oz
pumpkin
2 c
all-purpose flour
2 tsp
baking soda
2 tsp
cinnamon
1 tsp
baking powder
1/2 tsp
salt
1/4 c
unsalted butter, softened
8 oz
cream cheese, softened
16 oz
powdered sugar
2 tsp
vanilla

Step-By-Step

1Preheat oven to 350
2Combine sugar, oil, eggs, pumpkin in large bowl.
3Mix flour, baking soda. cinnamon, baking powder & salt in large bowl. Add to wet mixture and stir just until combined.
4Pour mixture onto rimmed cookie pan and bake for 35-40 minutes until toothpick comes out clean. Cool.
5While cake cools, beat butter, cream cheese, sugar and vanilla to make frosting. Then spread on cooled cake and slice.
