Shelia's Story

This cake is very rich but very delicious.


1 box yellow cake mix
1 (20 oz. ) can crushed pineapple in its own juice
2 cups sugar
1 box confectioners sugar
1 (8oz ) cream cheese
1/2 cup butter
1 cup chopped pecans

Directions Step-By-Step

Prepare cake according to package directions. Bake in 9x13 inch pan. Mix pineapple and sugar in sauce pan. Boil for 3 minutes. Punch holes in hot cake. Pour pineapple-- sugar mixture over cake.
Icing: Beat together confectioners sugar, cream cheese, and butter. Add pecans, spread on cake while still warm.

Shelia, thanks SO much for posting this recipe; I JUST saw this cake made on TV (no measurements given & their cake was made from scratch, but who cares) and they SAID it would be on their website, but when I checked, it wasn't there! Maybe it will be later, but none of their other recipes were able to to copied or printed, so I would have to write them down - who wants to do that??! Looked everywhere else and none can compare to this one I found at "home" from one of my "Just a Pinch" Recipe Club members who had the ORIGINAL.
To Patricia: They questioned too on TV why it was called the Elvis Cake, but no one really knew. Even in my internet searching for this recipe, the "Elvis Cake" was usually what you suggested or a Pound Cake because those were actually his favorites.
I myself can't wait to make and enjoy this one "just because" ~ No Matter What It's Called!!!!

Why is it called Elvis Presley cake? Is there a story behind it? When I saw the name I almost passed it by, since I thought it would be a peanut butter banana
