This is my go-to coffee cake recipe when I want an easy cake to make.

Ingredients For easy fruit-filled coffe cake

  • 3 lg
    eggs
  • 1-1/2 c
    plus 3 tbsp sugar, divided
  • 3/4 c
    vegetable oil , or canola oil
  • 1/4 c
    orange juice
  • 1 tsp
    vanilla
  • 2 c
    all purpose flour
  • 1 c
    whole wheat flour
  • 3 tsp
    baking powder
  • 1
    21 oz can cherry or apple pie filling
  • 1 tsp
    cinnamon

How To Make easy fruit-filled coffe cake

    Heat oven to 350. Spray a 9" x 13" pan w/ cooking spray. In lg bowl, cream together eggs, 1-1/2 cups sugar, oil, orange juice and vanilla. Beat in both flours and baking powder.

    Pour 1/2 the batter into pan. Spread fruit filling over batter in pan. In small bowl, combine remaining sugar and cinnamon.

    Sprinkle 1 tsp of cinnamon mix over fruit. Spoon remaining batter over ingredients in pan. Sprinkle w/ remaining cinnamon mix. Bake 15 mins. Reduce heat to 300. Bake 1 hr, or until a toothpick inserted in center comes out clean.
