Bekka's Notes:

This cake is ooey gooey, coconut-y, almond-y, joyous.

The cake starts off simple with a chocolate cake box mix, baked according to directions, but then it is soon transformed.

It will not disappoint.

 

Directions

Almond Joy Cake


1 box chocolate cake mix
Bake as directed on box.
Filling:

1 c. evaporated milk
1 c. sugar
24 lg. marshmallows
1 (7 oz.) bag Angel Flake coconut

Combine milk and sugar; add marshmallows and heat until melted. Add coconut. Poke holes in the cake using the handle of a wooden spoon, then pour over cake while hot.

Topping:

1 1/2 c. sugar
1/2 c. evaporated milk
1/2 c. butter
1 1/2 c. chocolate chips
1 c. almonds

Mix sugar, butter, and milk. Bring to a boil, add chocolate chips, stir until melted. Add nuts 3/4 cup of nuts. Pour over cake. Then sprinkle remaining nuts on top of the cake.

Opal, do you think it would be safe to substitute marshmallow creme for the whole marshmallows? I always have it on hand, but never buy marshmallows cause they get dried out when I don't use them all...thanks!

I am not sure Jan. I have never used the creme. You know the marshmallows melt anyway. If you try it let me know how it turns out. SO may things can be substitued in recipes so I don't see why it wouldn't work.

Dear Opal, This recipe is another use for chocolate cake mix. It sounds so delicious! I am driven to go to the grocery store and buy a series of cake mixes to try out all the recipes listed on JAP for a series of Almond Joy Cakes. Each sounds so good. I am torn between which recipe I like the most. I will bake several, and garner the votes from my family and friends. I will have to post my findings after I complete my comparisons. Thanks for the challenge. It is fun letting the family vote on a favorite version of a new recipe. LOL. :-)
