Daddy's Favorite Carrot Cake ( Kat)

My daddy gave me this recipe several years ago and said "Here this is what I want for my birthday cake. Make it." LOL so I did. Really moist cake. You can leave the walnuts out if you like or have nut allergies. I leave them out because daddy told me to. And well I have to do what daddy says right?

2 c
all purpose flour
2 tsp
baking powder
1 1/2 tsp
baking soda
1 tsp
2 tsp
2 c
1 c
canola or vegetable oil
2 c
grated carrots
8 oz
crushed pineapples
1/2 c
chopped walnuts ( optional)
8 oz
cream cheese, room temp
1/4 c
butter, room temp
3/4 c
confectioners' sugar

Directions Step-By-Step

Preheat oven to 350
Mix flour, baking soda, baking powder, salt,cinnamon and sugar in a large bowl, stir to make sure there is no lumps.
Add oil and eggs and mix well, add carrots, pineapple with juice and walnuts (optional). Mix well. Pour into well greased & floured cake pans( I line my cake pans with parchment paper instead of greasing & flour)
Bake 40-45 minutes at 350. Let cool completely before icing
ICING. Mix cream cheese, butter and confectioner's sugar until smooth. (If to sweet add 1/4 cup sour cream)

That's wonderful. My Mom died 23 years ago, and my Dad died 13 years ago.
I do still have my step Mom and my Hubs Mom, but his Dad died 15 years ago.
All of my Aunts and Uncles have also passed away. I just have cousins and 1 brother.
PTL I do have 4 children and 8 Grandchildren though.

Cin I lost my mom 24 years ago the 6th of this month, and I lost my other mom a year ago this past January and she was a wonderful second mom to me, even before i lost my mom, so he is all I have left. I do now however have some very wonderful in laws and I love them dearly and I am making some wonderful memories with them as well

Both my parents died years ago, all I have now are wonderful memories.

Well he has had to do it before, and about 4 years ago when my mom( step mom for 28 yrs) got to where she couldn't cook because of her health he had to do it all, it was always simple stuff but he still done it, but now let me tell ya, that man can make some dressing that is totally wonderful, he is trying to teach me, but mine is still dryer than his, daddy's is always perfect
