I baked these for a morning PTA meeting and they were a hit! This can also be baked in a 9x13" baking pan.

Ingredients For crumb cake muffins

  • *for the muffins:
  • 4 c
    butter, unsalted room temperature
  • 6 c
    sugar
  • 6 tsp
    vanilla extract
  • 8
    eggs
  • 9 c
    sifted flour
  • 13 1/2 Tbsp
    baking powder
  • 4 tsp
    salt
  • 4 c
    milk
  • *for the crumbs:
  • 2 c
    butter, unsalted room temperature
  • 4 c
    dark brown sugar
  • 4 c
    flour
  • 4 Tbsp
    cinnamon

How To Make crumb cake muffins

    Cream butter (room temperature) and sugar until well blended. Add egg and vanilla, mix until smooth. Sift flour, baking powder, and salt together, add alternately with milk. Mix until smooth, scrapping sides of bowl often. DO NOT OVER BEAT!

    Pre-heat oven at 350°. Pour batter into muffin tins smoothing out to fill bottom half. Sprinkle crumbs over muffins. Small crumbs work well larger ones will sink into batter. Bake on middle rack of oven on baking sheet for 15-20 minutes depending on your oven. Check that the middle of muffin springs back when touched lightly. Cool about 1/2 hour. Dust generously with cinnamon/powder sugar or even both!
