1Preheat oven to 450f. Combine graham crackers, melted butter and 2 Tbsp. sugar. Press into bottom of a 9 - 10" spring form pan. Bake for 5 minutes until crust is slightly golden brown. (Be careful not to burn.)
2Beat cream cheese and remaining sugar until light. smooth and creamy. Add eggs one at a time beating well after each. Scrape down sides of bowl frequently to prevent lumps of cream cheese. Add sour cream, corn starch and vanilla. Mix until well incorporated. Pour into pre-baked crust. Bake 10 minutes. Turn oven temperature down to 225 and bake 45 minutes longer or until center is set. Turn oven off. Let cheese cake sit in oven with the door partly ajar for 3 hours.
3Chill in pan until serving time. Use a knife to loosen from edge of pan. Remove ring. Place on decorative plate. Cut into servings. Put pie filling (optional) on top of each piece or on top of whole cake before serving. Serve with optional whipped cream. Cheese cake is just as good plain.
