Mix with mixer on high- Eggs, Cream Cheese, vanilla and lemon extract and sugar. Mix until smooth and creamy.
Place 1 vanilla wafer round side up in each cupcake liner. Pour batter half full in each. Bake at 350 for 15 minutes. They will not brown. Don't overbake. Cool completely, Top with cool whip and cherry when you serve them. Store in refrigerator.
