Ingredients

1/2 c butter
1 c dark brown sugar (firmly packed)
1/2 c pecan or walnut halves
1 c cranberries (fresh)
1 c pineapple (chunks, in juice and drained)
1 pkg yellow or pineapple cake mix
pineapple juice or water (see recipe)

Sea's Notes:

This is a tangy and refreshing twist on Pineapple Upside Down Cake.

The added color from the tart cranberries makes it a nice addition for the holidays (or anytime!).

Directions

Melt butter in 9x13 inch baking dish in 350 degree oven. Sprinkle with sugar, nuts, cranberries and pineapple.

Add water to reserved juice from pineapple, to equal amount of liquid specified on cake mix package. (I have used pineapple juice instead of water to make up the difference). Follow cake instructions on cake package.

Spread over fruit and bake at 350 degrees for 35-40 minutes or until cake tests done.

Cool for 5 minutes and invert onto large serving plate.

I need to alter the recipe to include toasting the nuts first. While it is not necessary, it gives the cake added flavor. Then again, I toast nuts for recipes often!

This cake is very good and certainly easy! Let me know what you think if you give it a try!

Do you grind up the cranberries or just use them whole?

I have always tossed nuts with a little melted butter to coat and toss them. Spread thinly on cookie sheet and bake at 350 degrees for 10 mins. At half way point, toss. Watch them carefully till nicely golden and toasted.

Whole berries but you could probably chop them as well. I like them whole!
