Megan's StoryI found this recipe on Barefeet in the Kitchen, but I couldn't figure out how to bring it over here, so I figured I'd just post it, even though it's not my own recipe. it's pretty easy, kind of like coffeecake, but lighter. i think it's going to be a hit at office Christmas parties.

1Preheat oven to 350 degrees
2with a mixer, beat the eggs and sugar until slightly thickened and light in color, about 5-7 minutes. the mixture should almost double in size. the eggs work as your leavening agent in this recipe, so do not skip this step.
3this mixture should form a ribbon when you lift the beaters out of the bowl.
4add the butter and vanilla; mix two more minutes.
5stir in the flour until just combined.
6add the cranberries and stir to mix throughout.
7spread in a buttered 9x13 pan. bake for 40-50 minutes or until very lightly browned and a toothpick inserted near the center of the cake comes out clean.
8let cool completely before cutting in to slices.
