This is the most wonderful, extremely moist cake you will ever have.
I'm actually not a fan of flaked coconut at all, but I usually sprinkle just a tad on top for presentation.
The flavor this cake has is out of this world. It's one of those deserts that you put in your mouth and it just melts. It really is a wonderfull and different cake. ONE NOTE: The cake MUST be refrigerated at all times!!

Ingredients

1 box
white or coconut cake mix
1 can(s)
eagle brand milk
1 can(s)
cream of coconut
1 pkg
reglular size tub of cool whip
1 pkg
angel flake coconut (optional in my house)
1 jar(s)
cherries (optional)

Directions Step-By-Step

Mix and bake cake as directed on box. When cake is done and STILL HOT; punch holes in the cake with a wooden spoon handle,

Combine the Eagle Brand milk and the Cream of Coconut, pour over cake and into holes. When cake has cooled, top with Cool Whip. Sprinkle with coconut flakes,may also garnish with cherries if you would like to. THIS CAKE MUST BE REFRIGERATED AT ALL TIMES!!

This cake is absolutely the most delicious cake I have ever made. I experimented with the icing the second time I made it and got rave reviews from friends and family. Icing recipe - one 8 oz. block of softened crean cheese, 1 cup of confec. sugar, one large container of cool whip. I creamed all together and spread on cake. I let it sit overnight in the refrigerator before serving. Wonderful!!

lol Suzanne, im trusting you that this has no calories or fat, so if i have extra pieces, which i will, yum yum, i have never made it with the cream of coconut and sweetned condensed both but im very excited about trying it that way.

i think i am going to make it this weekend or the next one, thank you again, hope you all have a fun and safe july 4th weekend, im in houston texas and it has been storming here bad since last night off and on,, not getting the hurricane here but i think we are getting the effects of being on the dirty side of it as they call it, no winds just rain, glad im work from home. think it will be over by saturday though,

Oh yes, Miss Ann, the Eagle Brand Milk is the sweet condensed milk, sorry I wasn't clear and of course, this cake has NO calories or fat!! hahahaha Wanda, hopefully you have made it by now, it is wonderful!! I have tried regular icing, but still go back to cool whip every time I just like the "lightness" of it. And Ann, I mix together the cream of coconut and the eagle brand and pour that thru the holes in the cake and you are right, it makes it very sweet! And Stephanie, I make it for occasions like church or bbq's and you are so right, there are never any leftovers!! Hope all of you enjoy it!!
