Suzanne's Story

This is the most wonderful, extremely moist cake you will ever have.
I'm actually not a fan of flaked coconut at all, but I usually sprinkle just a tad on top for presentation.
The flavor this cake has is out of this world. It's one of those deserts that you put in your mouth and it just melts. It really is a wonderfull and different cake. ONE NOTE: The cake MUST be refrigerated at all times!!

1 box
white or coconut cake mix
1 can(s)
eagle brand milk
1 can(s)
cream of coconut
1 pkg
reglular size tub of cool whip
1 pkg
angel flake coconut (optional in my house)
1 jar(s)
cherries (optional)

Directions Step-By-Step

Mix and bake cake as directed on box. When cake is done and STILL HOT; punch holes in the cake with a wooden spoon handle,
Combine the Eagle Brand milk and the Cream of Coconut, pour over cake and into holes. When cake has cooled, top with Cool Whip. Sprinkle with coconut flakes,may also garnish with cherries if you would like to. THIS CAKE MUST BE REFRIGERATED AT ALL TIMES!!

    Sounds wonderful - can't wait to try this! My dad use to make the most wonderful coconut cake and I haven't been able to duplicate it. I am anxious to try this recipe!

    I've been making this cake for several years!!! My husband & mom both absolutely LOVE it!! I'm always asked to make it for church dinners and such. There are never any leftovers!!

    i too have made this wonderful cake several times, but i havent had the eagle brand milk wiht it, just hte cream of coconut, poured on top and then iced with white icing, and then coconut, i had it the first time at a tea room, which is known for its deserts and i got them to tell me the secret which was the poking the holes and pouring that wonderful cream of coconut, is eagle milk the same as the sweet condensed milk made by Eagle? oh my if it is that will realy add to the sweetness, i thnk next time i make it i will use cream cheese frosting, im new at making it, i have always loved cream cheese frosting , just never knew how to make it until recently lol if i had known it was that easy i would have been doing it forever ago

    Oh yes, Miss Ann, the Eagle Brand Milk is the sweet condensed milk, sorry I wasn't clear and of course, this cake has NO calories or fat!! hahahaha Wanda, hopefully you have made it by now, it is wonderful!! I have tried regular icing, but still go back to cool whip every time I just like the "lightness" of it. And Ann, I mix together the cream of coconut and the eagle brand and pour that thru the holes in the cake and you are right, it makes it very sweet! And Stephanie, I make it for occasions like church or bbq's and you are so right, there are never any leftovers!! Hope all of you enjoy it!!
