Citrus Jello Pudding Cake
yellow cake mix w/ingredients to prepare (sugar free cake mix is my preference)
instant lemon pudding mix, small
1Prepare cake mix as directed in a 13x9 pan. Cool for 5 minutes.
2While cake is baking, dissolve Jello in 3/4 cup boiling water. Add 1/2 cup cold water. Set aside at room temperature.
3Using the handle of a wooden spoon, poke holes all over the cake. Slowly pour Jello mixture in holes and place cake in refrigerator for 30 minutes before icing.
4In a chilled metal bowl, beat together the Dream Whip, lemon pudding, and the cold milk until the mixture is thick and forms peaks, approximately four minutes.
5Spread over cake, then refrigerate until ready to serve.
