This Banana Pound Cake turned out to be very good..everyone loved it.

Ingredients For cin`s "banana pound cake" (for hubbys birthday)

  • FOR CAKE:
  • 1 pkg
    (18 1/2 oz.) lemon supreme cake mix (i used betty crocker)
  • 1 stick
    room temp. butter, unsalted
  • 4
    eggs at room temp.
  • 1/4 c
    oil
  • 1/2 c
    water
  • 1 1/3 c
    mashed ripe bananas (4 med.)
  • 1 pkg
    (3 3/4 oz.) instant vanilla pudding mix
  • 1/2 tsp
    cinnamon, fresh ground
  • 1/2 tsp
    nutmeg, fresh ground
  • 2 tsp
    white-mexican-vanilla
  • 4 oz
    sour cream
  • FOR *FROSTING:
  • 1/4
    container of a 16oz. ready made frosting
  • (i had some leftover duncan hines creamy home-style milk chocolate that i used)
  • 1/3 stick
    room temp. butter, unsalted
  • 5 oz
    sour cream
  • 3/4 to 1 cup powdered sugar

    Cin's Cake:

    Smash bananas with fork....smash well. Combine all ingredients and mix until blended. Then beat on medium speed for another 4 minutes.

    Grease and lightly floured bundt pan... pour in batter; sprinkle top with raw-sugar and cinnamon.

    Bake in a 350 dF oven for 1 hour (until cake tester or toothpick comes out clean).

    Cool, in pan, on cooling rack 10 minutes. Then remove from pan and set back on cooling rack to cool completely.

    Place on Cake Plate and at this point you can either ''Frost or Dust with powdered sugar'' your choice....yes, I made my frosting.

    FOR FROSTING: Heat the 1/4-container of ready-made frosting for 30 seconds in microwave, add butter and stir to mix. Mix sour cream and powdered sugar togehter; then add to chocolate frosting & butter mixture. Mix together well, and pour down over cooled cake. *If you make my above frosting it will be thick but still run nicely as you pour it down over the cake.
