Dates are used to add moisture to the cake. Dried pineapple, papaya, cherries, can replace some of the dried fruit. If cake looks to be browing too quickly lay a piece of baking paper across the top of the tin but avoid contact with the cake mix.

125 gbutter

1 cwhite sugar

800 gmixed dried fruit

200 gchopped dates

1/2 csherry

1 tspmixed spice

1/2 tspginger

pinchnutmeg

1 tspbaking soda

2 Tbspgolden syrup

2eggs

225 gflour
-
1/2 tspbaking powder

chopped nuts (optional)
How To Make christmas fruit cake

1Line a 20cm square cake tin with two layers of baking paper (or use butter wrapper or brown paper for bottom layer)

2Pour 1 cup strong tea over the mixed fruit (not dates) & microwave for 5 minutes. Stirring half way through. Add butter, sugar, dates. sherry, spices, baking soda & syrup. Microwave 2 minutes. Stir. Allow to cool fully (at least an hour or better overnight).

3Beat eggs until creamy. Stir through cooled fruit mixture. Sift dry ingredients, fold into fruit mix adding some chopped nuts if desired.

4Spoon mix into tin. Bake at 150C for 1 hour then at 125 for 2 hours or until cooked when tested with a skewer.
