2-3 boxes of famous chocolate wafer cookies
3 cups heavy whipping cream
1 tsp vanilla
sugar to taste

Jane's Notes:

I grew up on the log version of this cake, a family favorite. I've made it this way when serving it as a birthday cake for my son. Either way, it's delicious!

 

Directions

In a large bowl, beat cream, sugar and vanilla with an electric mixer on high speed until soft peaks form. The cake is quite rich, so I prefer not to make the whipped cream too sweet.

On a flat serving plate, arrange 7 cookies side by side in a circle, keeping 1 cookie in the center.

Spread whipped cream over cookies, repeating to the height you desire. Some cookies may be broken so I use them to fill in blank spots. Cover loosely with plastic wrap and refrigerate overnight.

This recipe can be made as a log, or at Christmas we make it into a wreath. Cut on the bias if you make it this way.

This recipe needs at least 4 hours to set, but I usually let it sit overnight or at least 8 hours. The one in the picture actually has a little too much whipped cream per cookie ratio but that's how my family likes it. I don't think thin mints will work because the cookie needs to absorb the liquid to make it cake-like. I have also made it in a spring form pan, and am going to try it with ginger snaps next time. If it turns out good, I'll let you know!

Nancy, I cut it just like a cake. There is a picture of how it looks next to the whole cake photo. And yes, that's me in the white jersey with my daughter, Liz at a Devils game.

My mother used to make this; she called it, "ice-box cake". (Yes, we had a regular refrigerator, but, back in the Stone Age, everyone still called them, "ice boxes".) Is there anything that can possibly be substitued for at least some of the cream (I have to watch fat intake)? Thanks.

I also grew up eating this cake. It's one of my favorites! How could you possibly go wrong with chocolate cookies and whipped cream? =)
