1 sm pkginstant chocolate fudge pudding mix, dry

1 tspbaking powder

1/2 tspbaking soda

1/2 tspsalt

2 tspinstant coffee powder

3/4 cbuttermilk
-
1 tsppure vanilla extract
-
1/8 tsppeppermint extract
- FROSTING:
-
2 cconfectioners' sugar
-
4 oz pkgcream cheese
-
1/8 tsppeppermint extract

4 - 6red food coloring drops
- GARNISH:
-
brown sprinkles
How To Make chocolate peppermint cupcakes

1CUPCAKES: Preheat oven to 350 degrees F. In a standing mixer with paddle, add brown sugar & butter, beat on medium speed for 2 minutes. Add eggs, 1 at a time, until combined. In another bowl, add flour, cocoa, dry pudding, powder, soda, salt & coffee; mix to combine. Add flour mixture to sugar mixture alternating with buttermilk & ending with flour mixture. Stir in extracts. Spoon batter into muffin cups lined with paper liners & bake 12 - 15 minutes or until cupcakes spring back when touched lightly in center. Cool in pans for 10 minutes, then remove to wire racks to cool completely.

2FROSTING: In a standing mixer with whisk, add all frosting ingredients & beat on low, about 2 minutes or until combined. In a pastry bag fitted with large star, pipe frosting onto cupcakes & sprinkle with brown sprinkles.
