Mmmmmmmmmmmmmmmm! If you have ever eaten a Chocolate Covered Cherry with the liquid center & the pink thick goopy center - you know what I am talking about. The liquid cherries are sooooo much better.

Ingredients For chocolate covered cherry cake

  • CAKE:
  • 1 box
    white cake mix
  • 1 sm box
    instant vanilla pudding mix, dry
  • 3 x lg
    eggs, slightly beaten
  • 1 Tbsp
    almond extract
  • 2 box
    chocolate covered cherries with liquid centers, frozen, divided
  • 2 Tbsp
    all purpose flour
  • FROSTING:
  • 3 - 8 oz pkg
    cream cheese, room temperature
  • 2 stick
    butter, room temperature
  • 2 Tbsp
    pure vanilla extract
  • 1/4 tsp
    kosher salt
  • 5 - 6 c
    confectioners' sugar

How To Make chocolate covered cherry cake

    Preheat oven to 350 degrees F.

    CAKE: In a medium bowl, add 1 box frozen cherries & toss with flour. NOTES: This will help them not sink to the bottom while baking.
  • Don't use this kind.

    In a large bowl, combine the cake mix, dry pudding, eggs & extract until well blended. Stir in one box of cherries until blended. Transfer to a 10" round cake pan coated with cooking spray. NOTE (CHERRIES): Keep frozen until ready to use. Use cherries with the liquid centers rather than the pink thick goop. (see pictures)

    Bake for 30 - 35 minutes or until a toothpick inserted near the center comes out clean. Cool completely on a wire rack.

    FROSTING: In a large bowl, beat cheese, butter, vanilla & salt until smooth. Gradually beat in sugar. Store frosting in the refrigerator until ready to use.

    Frost bottom layer of cooled cake with frosting & top with 2nd layer. Frost whole cake & then decorate with remaining frozen chocolate covered cherries.
