Chocolate Chip Banana Birthday Cake

My second oldest asked for this for his birthday and homemade M&M and English Toffee Tapioca Ice Cream. Of course, I whipped up one on the double.

It is made with homemade cream cheese frosting.

I ordered a edible fondant Pokemon image as well for $3.

He just loved his cake! We did too.

CREAM CHEESE FROSTING

1 stick
butter
2 pkg
cream cheese
1/2 c
precreamed shortening
1 c
confectioners' sugar
1 Tbsp
vanilla
1/2 tsp
banana extract
1 pinch
cinnamon
food coloring (optional)

Directions Step-By-Step

1
Combine dry ingredients for cake in a large mixing bowl, save chocolate and sprinkles.
2
In a smaller mixing bowl, add all wet cake ingredients including bananas. Beat well for 3 minutes.
3
Then add mix to dry ingredients. Beat for an additional 3 minutes.
4
Fold in chips and sprinkles.
5
Pour into either two circular baking pans or one large one was I did. Prespray with Baker's Joy.
6
Bake at 325F for approximately 50 minutes or when a toothpick comes out dry when piercing the center.
7
Wait 15 minutes before inverting cake onto desire serving plate. Then allow to cool totally.
8
To make frosting, just place all the ingredients in a mixing bowl (save food coloring) and beat for 2 minutes.
9
If you are adding separate color frosting, scoop out a large spoonful into separate dishes and whip with desired food coloring choice. Add to a piping bag and decorate.
