Ingredients

1 bx cake mix, devils food
1 jar(s) maraschino cherries 10oz drained (1/4 cup juice reserved)
1 c cherry coke
1/2 c vegetable oil
3 eggs
12 oz container whipped vanilla frosting
1 c marshmallow cream
24 maraschino cherries with stems

Melissa's Notes:

This recipe reminds me of chocolate covered cherries and makes awesome cupcakes for Valentines Day.

 

Directions

Preheat oven 350 degrees. Grease and flour 13x9 cake pan. Chop up cherries reserving 1/4 cup of the juice.

In a large bowl mix cake mix, coke, cherry juice, oil and eggs on med speed for 2 mins. Stir in chopped cherries.

Pour into pan and bake for 35 mins or until toothpick comes out clean. If making cupcakes fill 3/4 of the way full and bake 18-21 minutes. Makes 24 cupcakes. Let cool completely.

For frosting mix whipped frosting and marshmallow cream until smooth. Top each piece of cake or cupcakes with a well drained maraschino cherry.

Yes have made cupcakes delish! But have to try this frosting! My frosting was a can of whipped frosting w/few tbls cherry juice from maraschino cherries! ;)

This sounds down right sinful!! Thanks for posting. I've been trying to find recipes with maraschino cherries. I have several small jars and a couple of the really big jars that I didn't make candy with for Christmas.
Do you happen to know if you can make cherry pie filling with m.c.? Thanks!!

Billie I have never tried to make a pie filling with them. Sounds interesting. There is a nice recipe on JAP Maraschino Cherry Bars by Gail Springsteen. I have made them in the past and they are quite tasty.

Thanks Melissa. I'm going to go check that out right now. Do you know if they would freeze well? It's just me, so I'm trying to find stuff that I can make and freeze to give as gifts.
