Ingredients For cherry margarita rice krispie mini cupcakes

10 oz pkgmarshmallows

2 Tbspbutter
-
2 Tbspcherry jell-o gelatin mix

3 1/2 crice krispies cereal
-
1 canvanilla frosting
-
3 pktscrystallized lime
-
2 - 3red food coloring drops
- GARNISH:
-
pink decorating sugar
-
12maraschino cherries, with stem, patted dry
How To Make cherry margarita rice krispie mini cupcakes

1Coat 12 mini muffin cups with cooking spray.

2In a large pot, melt 1/2 bag marshmallows (2 1/2 C) & butter over medium low heat, stirring occasionally, until smooth.

3Stir in jell-o & rice krispies; mix well. NOTE: To avoid mixture of sticking to the spoon or spatula, spray it with cooking spray.

4Divide mixture amoung the muffin cups, pressing into cups slightly overlapping edges. Set aside to cool.

5Stir together frosting, lime & food coloring; mix well.

6Transfer frosting to a pastry bag fitted with a round tip. Pipe onto cups & sprinkle with pink sugar; top with cherry.
