    (8 oz. each) pkg. cream cheese, softened
  • 1/2 c
    sugar
  • 2
    eggs
  • 2 Tbsp
    plain yogurt
  • 1 tsp
    vanilla
  • 2 Tbsp
    flour
  • 3/4 c
    chocolate chips
  • 1/2 tsp
    shortening
  • 1 can
    (21 oz.) lucky leaf cherry pie filling
  • 2 1/2 c
    oreo cookie crumbs
  • 5 Tbsp
    butter, melted
  • 10
    andes cherry jubilee thins, cut in half
  • 1 c
    cool whip
  • 1/2 c
    whipping cream
  • 1 c
    chocolate chips

How To Make cherry jubilee chocolate cheesecakes

    Mix together the Oreo cookie crumbs and melted butter. Spoon evenly into 20 cupcake liners and press down. Set aside. Cream together the cream cheese and sugar until light. Add the eggs, yogurt, flour and vanilla and beat again.

    Place the chocolate chips and shortening in a microwave safe bowl and heat for 30 seconds. Stir and repeat until melted. Let cool for 1-2 minutes. Pour into the cheesecake batter and beat until mixed thoroughly. Spoon the batter evenly into the cupcake liners. Using a smaller spoon, pull aside some of the batter and drop I tsp. cherry pie filling into the center of the cheesecakes. Swirl very lightly. Bake at 350* for 25 minutes. Let cool completely.

    In a sauce pan heat the whipping cream to boiling. Remove from the heat and stir in the chocolate chips. Stir until melted. Let cool for a few minutes. Place a spoonful on each cheesecake and spread out. Let set. Top with cool whip and cherry candies if desired.
