This is another of my all time favorites, a fruit filled Coffee cake, & another speciality of My resturant. Its a Personal Favorite of mine and My Guests. I used many different FRUIT FILLINGS, every week it was different. Apple, Apricot, Pineapple, Peach,Rhubarb, Strawberry Rhubarb, You name it I did it. It is so good with Your favorite cup of Hot tea, or Coffee, fo Breakfast, Snack or just dessert.

Ingredients For cherry coffee cake, by freda
- COFFEE CAKE

1 Cupsugar

1cube/stick butter, do not use margarine

1 Cupsour cream
-
2eggs
-
1 Tbsvanilla
-
2 Cupsflour
-
1 1/2 tspbaking pdr
-
1/2 tspbaking soda
-
1/2 tspsalt
-
1 (21 oz)can cherry pie filling, or your favorite filling
- TOPPING
-
1/4 Cupflour
-
1/4 Cupsugar
-
1/4 Cuppecans or walnuts (chopped)

1 tspcinnamin, or apple pie spice

3 TBSbutter, not margarine
How To Make cherry coffee cake, by freda

1Preheat Oven to 325. Grease 13" X 9" Pan Mix 1 C sugar and Butter together Beat @ Med Speed with Mixer, until creamed. ADD; Sour Cream, Eggs, and Vanilla. Continue beating till mixed well.

2Reduce Speed to Low, and add dry Ingredients; 2 C flour, Baking Pdr, Soda, & Salt. Beat till well mixed

3Spread 1/2 the batter in the bottom of GREASED pan. Spoon Cherry Pie Filling over batter. Spoon remaiing batter over Cherry filling carefully spreading.

4Topping: Stir together dry ingredients, Flour, Sugar, Nuts, Cinnamin, then Cut in the 3 TBS butter, until it resembles coarse crumbs. Sprinkle thi topping over the batter. BAKE @ 325 45-50 min. till toothpick comes out clean, and the topping is a dark golden Brown. ENJOY this Yummy Coffee Cake on me.
