Created by me when looking for a sweet surprise for my sweetheart on Valentine's Day.

The pecan icing on this cake is amazing! And, the cherry-berry cake itself is super easy and moist. There are bursts of cherry in each bite. You can taste the bits of sweet coconut too. Serve this lovely cake for a sweet ending to your meal!

Ingredients For cherry-berry cake

  • 1 box
    strawberry cake mix
  • 1 can
    cherry pie filling
  • 3 lg
    eggs
  • 1 cup
    flaked coconut
  • 1 cup
    chopped pecans
  • 1 1/2 cup
    strawberry preserves heated until bubbly in microwave
  • FROSTING
  • 1 pkg
    cream cheese, softened (8 oz)
  • 1 stick
    butter softened
  • 1 box
    powdered sugar (16 oz)
  • 2-3 Tbsp
    milk
  • 1/2 c
    chopped pecans

How To Make cherry-berry cake

  • Cake mix, cherry pie filling, and eggs combined together in a mixing bowl.

    Combine the first three ingredients for the cake in large mixing bowl with mixer until moist and well incorporated.
  • Coconuts and pecans folded in.

    Next fold in the coconut and pecans.
  • Batter poured into a greased baking dish.

    Pour the batter into a 9x13 baking pan that has been lightly sprayed with a vegetable oil spray.
  • Cake baking in the oven.

    Bake in a preheated 350-degree oven for approximately 45 minutes or until a toothpick comes out clean.
  • Strawberry preserves heating in the microwave.

    In the microwave and microwave-safe bowl, heat the strawberry preserves until hot and bubbly...1-2 minutes depending on your oven.
  • Stirring strawberry preserves with a fork.

    Stir rapidly with a fork.
  • Drizzling melted cherry preserves over the cake.

    Then drizzle over the cake while still hot from the oven. Set the cake aside and allow to completely cool.
  • Butter and cream cheese creamed together.

    Frosting: Cream together the softened cream cheese and butter until smooth with mixer.
  • Slowly adding the powdered sugar.

    Add powdered sugar 1 cup at a time until smooth.
  • Milk incorporated until it's a frosting consistency.

    Add milk 1 tablespoon at a time until the frosting is a good consistency to spread.
  • Folding in the pecans.

    Next fold in the pecans.
  • Cherry-Berry Cake frosted with pecans and strawberries on top.

    Then frost the completely cooled cake. Cover the cake and allow it to stand at least a few hours before serving to allow for moistness to build. The longer this cake sits the better it gets!
