This dessert is awesome, it turned out even better than I had anticipated, so darn easy too! If you like a scrumptious moist cake and cherry pie, you will love this one! It didn't stand a chance in my house. Everyone but me had seconds. I can see this dessert will be requested often. Serve with a confectioners's sugar glaze and almonds as I did, or alone with ice cream. Awesome!!

  • 1 c
    flour
  • 2 tsp
    baking powder
  • 1/8 tsp
    salt
  • 1/4 c
    softened, butter
  • 1 c
    sugar - divided
  • 1/4 tsp
    almond extract
  • 1/2 c
    milk
  • 1 can
    tart pitted cherries, drained - reserve juice
  • Sliced
    almonds. - optional
  • Glaze
    optional

    Preheat oven to 350 degree F. Thoroughly grease a 9 inch deep dish pie plate or an 8 inch square baking dish. Sift flour, baking powder and salt together. Set aside. Drain cherries, reserving liquid and enough water to make 3/4 cup. Set aside. Cream 1/ 2 cup sugar with butter, until fluffy. Mix in almond extract. To the sugar mixture, alternate, beating in milk and flour mixture, ending with flour. Making sure is thoroughly blended.

    Spread batter into prepared dish. Evenly distribute cherries over the batter. Sprinkle evenly with remaining sugar and pour reserved juice evenly over cherries.

    Place in oven and bake 40 - 45 minutes, or until cake is no longer doughy and golden. Cool and sprinkle with almonds and drizzle with glaze as I did, or just serve warm with ice cream. Its awesome either way!
