1 1/2 cgrated carrots

2/3 cchopped pecans

4eggs

1/2 tspsalt

1/3 cfresh orange juice
How To Make carrot-orange cake # 2

1Preheat oven to 350 degrees. Grease and flour tube pan. Cream butter and sugar. Add spices and orange rind. Beat eggs well in a seperate bowl. Add to butter and sugar.

2Sift flour, salt and baking powder and to the batter alternately with the orange juice.

3Fold in carrots and pecans. Bake 1 hr or until tests done. Cool and turn out. Dust confectioners sugar, if desired, or spread with cream cheese frosting.
