Carrot Cream Cheese Swirl Cake

What can I say? Was in the mood for plain old carrot cake but, being me, I decided on a whim to combine the cake and frosting elements in one. And oh my gosh, yum.

Ingredients

2 c
wheat flour
1 tsp
baking soda
1 Tbsp
baking powder
1 Tbsp
cinnamon
1/2 Tbsp
ginger powder
dash(es)
salt
1 c
applesauce, unsweetened
1 1/2 c
carrot, shredded
1 c
water
8 oz
cream cheese, room temperature
1/2 c
honey

Directions Step-By-Step

Preheat oven to 375 degrees.

In a large mixing bowl, combine all dry ingredients and spices. Add the applesauce, shredded carrot, and water until well-mixed. Set aside

Using a standing mixer, with the wire whisk attachment, beat together the cream cheese and honey for a few minutes or until well-combined. Scrape the sides if necessary.

Spread the carrot cake batter in a greased 9x13 baking pan. Pour spoonfulls of the cream cheese mixture on top.

Swirl the two batters together in the pan using a knife. Bake for 25 minutes. Allow to cool completely before serving.
