This is the moistest, yummiest carrot cake ever! Has been my favorite ever since my great-grandma Fronie made it. Although, I know it will never quite taste the same as hers, it's pretty darn good. Nuts are optional, however, I never add them.

Ingredients For carrot cake with cream cheese frosting

2 csugar

1 1/2 cvegetable oil

4eggs

2 tspbaking soda

2 tspbaking powder

2 cflour

2 tspcinnamon

1 tspsalt

1 cwalnuts, chopped (optional)

3 ccarrots, grated

1 lbpowdered sugar

8 ozcream cheese
-
1/2 stickbutter or oleo

1 tspvanilla
How To Make carrot cake with cream cheese frosting

1Preheat oven to 350. Grease 9x13 cake pan.

2Cream together sugar, oil, eggs. Combine dry ingredients and sift. Add to sugar mixture. Fold in carrots. Add nuts if using.

3Spread into pan and bake for about 45 minutes to 1 hour, or until toothpick inserted in middle comes out clean. Do not over bake !

4To make frosting: Combine together powdered sugar, cream cheese, butter and vanilla. Beat on medium speed about 2 minutes.

5Cool cake completely and spread with frosting.
