Carrot Cake with Cream Cheese Frosting

Love this cake.
Store in refrigerator
Makes a 13"x9" or 1 8" round cake.

(Some batter will be left over-make cup cakes)

2 c
sugar
2 c
flour
2 tsp
baking soda
1 tsp
salt
3 tsp
cinnamon
1 1/2 c
vegetable oil
4 large
eggs
3 c
grated carrots
1 c
chopped nuts-(optional)
1 tsp
vanilla

Directions Step-By-Step

For the cake:preheat oven to 350.
sift together sugar,flour,soda,and cinnamon in a large bowl.
Stir in the oil.Add eggs,one at a time,mixing well after each addition.
Add carrot,nuts,and vanilla,mixing thoroughly.
Pour into a greased,floured 13"x9"cake pan.
For a more elegant layer cake,use 2-8" round cake pans(some batter will be left over---make cupcakes.

bake for 30 minutes.Cool in pan.Spread with cream cheese frosting.--For layer cake,remove layers from pan and frost between layers and on top.

For the icing: beat together cream cheese and butter until smooth.Blend in vanilla. Sift powdered sugar and gradually beat into cream cheese mixture.
