Ingredients

1 c flour
1 tsp baking powder
1/2 tsp cinnamon
1/2 tsp salt
1 1/2 c grated carrot
1/2 c chopped nuts
2 eggs
1 c sugar
3/4 c vegetable oil
2 tsp vanilla extract
2 c powder sugar
1/4 oz cream cheese
1/2 tsp vanilla extract
1/4 c butter softened

Directions

Combine flour, baking powder, cinnamon, salt, sugar, sift together.

Beat 2 eggs, veg.oil, vanilla, add dry ingredients mixing well. Add carrots and nuts. Pour into greased cake pans and bake 350 degrees for 50-60 minutes.

Let cake cool and make frosting
Mix butter, cream cheese and vanilla and add powder sugar.
You can do the two layers or split the two layers into 4. Frost each layer. then frost the entire cake.
