Tonya's Ultimate Carrot Cake

I searched all over to find a carrot cake recipe that had all these ingredients and couldn't find one so I changed/converted one to get the results I wanted. I've been told by everyone that tasted it that this is the best carrot cake ever. I use a basic cream cheese frosting. Instead of 2 cups all purpose flour, try 1 c. flour and 1 c. cake flour but if you don't have cake flour it will still come out scumptous. Enjoy!!

Ingredients

1 1/2 c
sugar
1 c
vegetable oil
3
eggs
2 c
all purpose flour
1 1/2 tsp
cinnamon, ground
1/4 tsp
nutmeg
1 tsp
baking soda
1/2 tsp
salt
1 tsp
vanilla extract
3 c
shredded carrots
1 c
pineapple crushed, drained
3/4 c
white raisins
1 c
nuts
1 c
shredded coconut, optional

Step-By-Step

1Mix sugar, oil and eggs in large bowl until blended
2Stir in flour, cinnamon, baking soda, salt, nutmeg and vanilla.
3Add carrots, pineapple, coconut, raisins and nuts.
4heat oven to 350 degrees. Pour batter into 13 x 9 x 2, (2) 9" round or (2) 8" round pans, well greased and floured or use baking spray. Bake for 30-35 minutes or until toothpick inserted in center comes out clean. Cool and frost as desired.
