Ingredients For caramel apple cheesecake bars

  • CRUST
  • 2 c
    all-purpose flour
  • 1/2 c
    firmly packed brown sugar
  • 1/4 tsp
    salt
  • 1/2 tsp
    cinnamon
  • 1 c
    (2 sticks) butter, softened
  • APPLES
  • 3
    granny smith apples, peeled, cored and finely chopped
  • 1 Tbsp
    white sugar
  • 1 Tbsp
    brown sugar, packed
  • 1/2 tsp
    ground cinnamon
  • 1/4 tsp
    ground nutmeg
  • CHEESECAKE LAYER
  • 16 oz
    packages cream cheese, softened
  • 1/2 c
    white sugar
  • 2 lg
    eggs
  • 1 tsp
    vanilla extract
  • STREUSEL TOPPING:
  • 1 c
    firmly packed light brown sugar
  • 1 c
    all-purpose flour
  • 1/2 tsp
    cinnamon
  • 1/2 c
    quick cooking oats
  • 1/2 c
    (1 stick) butter, softened
  • caramel ice cream topping

How To Make caramel apple cheesecake bars

    Preheat oven to 350.

    In medium bowl combine, flour, brown sugar,salt and cinnamon. Cut in the butter until the mixture is crumbly and well combined.

    Press the mixture into a well greased 9x13 baking pan.

    Bake 10 minutes or until lightly browned.

    Place diced apples into a bowl and toss with sugars, cinnamon and nutmeg. Set aside.

    In a medium bowl,cream together cream cheese and sugar. Beat in the eggs until creamy and combined.

    Spread cream cheese mixture over the crust and top with the apples

    Make streusel mixture by combining all the streusel ingredients until crumbly.

    Sprinkle the streusel mixture over the apples.

    Bake for 30-40 minutes until cheesecake layer is done.(test for doneness with tooth pick (it will come out clean of cream cheese))

    Remove from oven and let cool.

    When cooled completely drizzle on the caramel topping.

    These are ready to eat when they come out of the oven, but I prefer to refrigerate them for at least 3 hours to give the cheesecake layer time to set.
