CANDY GUM DROP CAKE

My mom had a small home town bake shop and a client gave this to her and we have been making it since the 70's. We make our fruit cake and this for the ones that do not like fruit cake and it is gone before the other is half gone. ENJOY!

Ingredients

1 lb
white raisins
1-2 large
gum drops, cut up, no black-not spice drops
1 c
pecans, pieces
1 Tbsp
butter
4 c
flour
1 tsp
cinnamon
1/2 tsp
clove, ground
1/2 tsp
salt
1/2 tsp
nutmeg
1/2 tsp
mace
1-2 c
water
2 c
sugar
2
eggs
11/2 c
applesauce, strained
2 stick
butter
1 tsp
baking soda
1 Tbsp
water, hot
1 Tbsp
vanilla extract

Step-By-Step

1Take the pecans and fry them in the 1 tablespoon butter till toasted an then set aside.

Strain the applesauce and set aside.

Dissolved the baking soda in 1 tablespoon hot water.

Cut the gum drops in fourths.
2Sift togeher the dry ingrediants together:flour, cinnamon, cloves, salt, nutmeg, mace.

When mixed add the raisins, pecans, and gum drops and sed the mix aside.
3Cream sugar and butter then beat in eggs one at a time. Then add in applesauce.

Add in flour mixture in small amounts at a time then add the vanilla. Mix in water as needed but not to exceed the two cups.
4This will make a 1/4 sheet pan or you can use loaf pans also.

Flour and grease the pan, then pour your mixture in.
5Pre-heat the your oven to 350

Bake to 30 - 40 minutes

Cake will be ready when a tooth pick or cake tester comes out clean.
6When cool turn out and you can leave plane, dust with powderd sugar, or yo can frost with your favorite frosting/icing and decorations: like more gum drops!
