Ingredients For cake mix

• 2 1/3 c

  unbleached all purpose flour or cake flour
• 1 Tbsp

  baking powder
• 3/4 tsp

  salt
• 1 c

  sugar ( i use evaporated cane crystals)
• 1/2 c

  oil or melted butter
• 3 lg

  eggs
• 1 1/2 c

  milk
• 1-2 tsp

  vanilla
• optional: add 1 pkg pudding mix + 1 lge egg
• YELLOW CAKE:
• make as is
• WHITE CAKE:
• use 4 egg whites instead of the 3 eggs
• CHOCOLATE CAKE:
• 1/2 c

  cocoa (add to dry ingredients before adding the milk)
• SPICE CAKE:
• 1 tsp

  cinnamon
• 1/4 tsp

  cloves
• 1/4 tsp

  allspice ( add all of these to dry ingredients)
• LEMON CAKE:
• 1/2 c

  lemon juice in place of 1/2 cup of the milk
• 1-2 tsp

  lemon extract in place of the vanilla
• opt- lemon zest & yellow food coloring
