Ingredients For blueberry cupcakes w/ maple buttercream frosting

  • BLUEBERRY PANCAKE CUPCAKES:
  • 3 1/3 c
    all purpose flour
  • 1 Tbsp
    cinnamon, ground
  • 1 tsp
    salt
  • 1 tsp
    baking soda
  • 1/2 tsp
    baking powder
  • 1/2 tsp
    nutmeg
  • 1 sm box
    instant vanilla pudding mix, dry
  • 8 oz
    sour cream
  • 1/2 c
    milk
  • 2 Tbsp
    pure vanilla extract
  • 2 stick
    butter, room temperature
  • 1 2/3 c
    sugar
  • 3 x lg
    eggs
  • 2 x lg
    egg whites
  • 2 Tbsp
    all purpose flour
  • 2 c
    blueberries, fresh or frozen
  • MAPLE BUTTERCREAM:
  • 8 oz pkg
    cream cheese, room temperature
  • 1 stick
    butter, room temperature
  • 3 Tbsp
    pure maple syrup (not pancake or extract)
  • 4 c
    confectioners' sugar
  • 1 Tbsp
    milk, if needed
  • GARNISH:
  • cinnamon sugar mix
  • blueberries

How To Make blueberry cupcakes w/ maple buttercream frosting

    CUPCAKES: Preheat oven to 350 degrees F. Line 24 muffin cup with cupcake liners.

    In a large bowl, sift flour, cinnamon, salt, soda, baking powder, nutmeg & dry pudding; mix to combine. Set aside.

    In a stand mixer with paddle, beat butter & sugar until light & fluffy. On low, add eggs, egg whites, one at a time, until combined.

    Alternately beat in flour mixture & sour cream mixture until just blended.

    In medum bowl, add blueberries & 2 tbsp flour; toss to coat. (This will help the blueberries not sink when they are baking).

    Add blueberry mixture in & fold well. Divide among liners. Bake 18 minutes or until toothpick comes out clean. Let cool completely.

    FROSTING: In stand mixer with whisk, beat cream cheese & butter until fluffy. Beat in syrup, then sugar & if needed, 1 tbsp milk to desired consistency. In pastry bag fitted with large star tip, pipe over cupcakes & sprinkle with cinnamon sugar & 2 - 3 blueberries.
