Ingredients For blueberry coffeecake

  • CAKE:
  • 2 c
    all purpose flour
  • 3/4 c
    sugar
  • 2 1/2 tsp
    baking powder
  • 1/2 tsp
    salt
  • 1/4 c
    butter or margarine, softened
  • 3/4 c
    milk
  • 1
    egg
  • 2 c
    fresh or frozen blueberries, no need to thaw, if frozen
  • TOPPING:
  • 1/2 c
    sugar
  • 1/3 c
    all purpose flour
  • 1/2 tsp
    cinnamon
  • 1/4 tsp
    nutmeg (i use fresh, but use whatever is on hand)
  • 1/4 c
    butter, softened

How To Make blueberry coffeecake

    Preheat oven to 375 degrees.

    In a bowl, blend together flour, sugar, baking powder, salt, butter or margarine, milk and egg. Using an electric mixer, beat vigorously for 30 seconds. Carefully fold blueberries into batter. Pour into a greased 9-inch-square cake pan.

    For topping, in a bowl combine sugar, flour, cinnamon, nutmeg and butter; sprinkle over batter. Bake for 45 to 50 minutes, or until cake tests done.
