Ingredients

1 pkg yellow cake mix (regular size)
3 eggs
1 c orange juice
1/3 c canola oil
1 - 1/2 c fresh blueberries ( i have used frozen )
1 Tbsp grated lemon peel
1 Tbsp grated orange peel
CITRUS FROSTING:
1 pkg (3 ounces) cream cheese, softened
1/4 c butter, softened
3 c confectioners' sugar
2 Tbsp orange juice
2 tsp grated orange peel
1 tsp grated lemon peel
2 c whipped topping

I am always asked for the recipe every time I make this delicious cake. Quick and easy to prepare is a plus.



I also have used frozen blueberries in this cake..they work fine if you can't get fresh.

Directions

In a large bowl, combine the cake mix, eggs, orange juice and oil; beat on low speed for 30 seconds. Beat on medium for 2 minutes.

Fold in blueberries and peels. Pour into two greased and floured 9-in. round baking pans.

Bake at 350° for 20-25 minutes or until a toothpick inserted near the center comes out clean. Cool for 10 minutes before removing from pans to wire racks to cool completely.

For frosting, in a small bowl, combine cream cheese and butter until fluffy. Add the confectioners' sugar, orange juice and peels; beat until blended. Fold in whipped topping.

Spread frosting between layers and over the top and sides of cake. Refrigerate until serving

I will take several pictures, Cass. I'm making it tomorrow. Do you know I spent $15 on lemon and orange peel? I had no idea that stuff was so expensive. I've never used either before in a recipe. But at least now I have it, for this and other recipes. Can't wait to taste this cake!

Ellen.. I know what you mean about being expensive..the last time I made it, I used zest..wasn't as much citrus taste though, but still good. Can't wait to see your final results.

I make my own dried citrus zest! I just grate an lemon or orange or grapefruit and put the zest on a cookie sheet lined with parchment paper and put in a 200 degree oven until dried, stir it around once in a while. That stuff "is expensive" in the spice aisle!!!

Cassie, beautiful looking cake and like the sounds of the ingrediants. I usually never do any cake mixes but this is a cut above with the other beautiful ingrediants in it. Will try this next week. Thanks for the post.
