Bar Harbor Gingerbread

This is a an old-fashioned flavored gingerbread. It's good served with vanilla ice cream or hot applesauce.

Ingredients

1/2 c
butter or margarine
1/2 c
granulated sugar
1/2 c
brown sugar
1 tsp
vanilla
2
eggs
3/4 c
molasses
2 c
all-purpose flour
1 Tbsp
unsweetened cocoa
1 1/2 tsp
ground cinnamon
1 1/2 tsp
ground nutmeg
1 tsp
baking powder
1 tsp
baking soda
3/4 c
buttermilk
1 1/2 tsp
ginger

Step-By-Step

1Cream until light and fluffy the butter,white sugar and brown sugar. Beat in the vanilla and eggs. Blend in the molasses.

2Combine flour, cocoa, cinnamon, ginger, nutmeg, baking powder and soda in a bowl.

3Add the dry ingredients to the wet mixture alternately with the buttermilk. Be sure to beat well after each addition.

4Pour into a well greased bundt or tube pan. Bake for 35 to 40 minutes at 350 degrees or until cake tests done.

5Cool cake for 30 minutes. Turn out on rack to complete cooling.
